Only the words this ledger actually uses, defined the way the records use them rather than the way a dictionary would.
| Curd | Milk protein that has been coagulated by rennet or acid and has begun to separate from the whey. | Fresh |
| Set time | The minutes between adding rennet and cutting the curd. | Fresh |
| Flocculation | The first visible moment the milk stops behaving like a liquid — a cap or a speck on the surface will hold still when nudged. | Fresh |
| Scald | Raising the curd-and-whey temperature after cutting to drive out moisture. | Semi-hard |
| Whey | The liquid left after the curd sets and drains. | Fresh |
| pH at drain | The acidity of the curd at the moment the whey is poured off. | Hard |
| Brine | A salt solution used to salt and to cool a pressed wheel. | Semi-hard |
| Dry salting | Rubbing salt directly onto the wheel in two or three applications, waiting for each to be absorbed before the next. | Hard |
| Press ladder | The schedule of increasing weights and durations during pressing, usually three steps. | Hard |
| Affinage | Everything that happens in the cave: turning, brushing, washing, oiling, and adjusting temperature and humidity as the wheel changes. | Soft ripened |
| Bloomy rind | A white felt of Penicillium candidum grown by spraying the surface and holding the cave at 90-95% humidity. | Soft ripened |
| Washed rind | A rind kept damp with weak brine so that Brevibacterium linens colonises it, giving the orange colour and the smell that divides a room. | Soft ripened |
| Target moisture | The percentage of water in the finished paste, which is what every decision in the make is actually steering toward. | Semi-hard |
| Bitterness | A persistent bitter note, usually from too much rennet or from a paste that stayed too acidic while it aged. | Hard |
| Early blowing | Irregular holes appearing in the first days after pressing, caused by coliform bacteria rather than by the propionic culture that makes proper eyes. | Semi-hard |
| Rind crack | A split in the rind from a cave that is too dry or a wheel that was turned too rarely. | Hard |
