Acceptance

By using this site you accept these terms. If you do not accept them, please do not use the site. We may update them; the date at the top of the page will change when we do.

Food safety disclaimer

The records on this site describe what we did in our own kitchen and cave. They are not instructions that are guaranteed to produce a safe result in yours. Cheesemaking involves raw milk, controlled bacterial cultures, and long periods of ambient-temperature storage, all of which carry a risk of foodborne illness.

Nothing here is medical, nutritional or food-safety advice. If you are pregnant, immunocompromised, elderly, or preparing food for someone who is, consult a qualified professional before eating raw-milk or long-aged home cheeses. You are responsible for the hygiene of your own equipment, the quality of your own milk, and the safety of what you choose to eat.

Accuracy

We aim to record parameters accurately, including the batches that failed. Even so, milk composition, culture activity, rennet strength and cave conditions vary, and repeating a record exactly will not reproduce a cheese exactly. Numbers here are a starting point to adjust from, not a guarantee.

Where we are uncertain about a mechanism — for example, the exact cause of an unusual gas pattern — we say so rather than inventing a confident explanation.

Intellectual property

The text, the record data and the generated diagrams on this site belong to Curd & Rind. You may quote short passages with a link back to the page you took them from. You may not republish records or figures wholesale, or use them to train a commercial model, without written permission.

The names of cheeses — Parmigiano, Gruyère, Camembert — are used descriptively to identify a style. Where a name is protected by a designation of origin, our use of the '-style' suffix indicates a home interpretation and not a protected product.

This site carries advertising and links to other websites. We are not responsible for the content, accuracy or practices of any third-party site, including advertisers. A link is not an endorsement.

Limitation of liability

The site is provided 'as is', without warranties of any kind. To the fullest extent permitted by law, Curd & Rind is not liable for any loss, illness or damage arising from the use of, or reliance on, anything published here.
